Chorizo Pasta

I first made this a few years ago purely by accident. I have a tendency to experiment with things I find in the cupboard and this was the result, a mate of mine gave me the marmite tip sometime after.

I absolutely love making it because my two kids love it and ask me to make it all the time.

I hope you enjoy making and eating it too.

Chorizo Pasta

Ingredients

45 mins
6 servings
  1. 2tins of chopped tomatoes, blended smooth
  2. 1Garlic clove, finely chopped
  3. 4 tbspolive oil
  4. 2oxo cubes
  5. 1A splash of Lea & Perrins
  6. 1heaped teaspoon of Marmite
  7. 1squirt of tomato ketchup
  8. 1squirt of tomato puree
  9. 1chorizo ring, chopped into small chunks
  10. 1onion, finely chopped
  11. 1Salt and pepper
  12. 1Sugar to taste
  13. 1Pasta tubes (enough for 6 people)

    Prepare the onions, chorizo, garlic and tomatoes.

    Throw a good couple of glugs of olive oil into a large saucepan, add the onions and cook until transparent and soft then add the chorizo and cook for about 5 minutes to let all the oil and flavour ooze out and turn the onions red.

    Then add the garlic and cook for a couple of minutes.

    Add the blended chopped tomatoes and stir all the onions and chorizo through. The chorizo /onion oil will combine.

    Now add the puree, ketchup, Lea & Perrins and mix in. Turn the heart down to low and sprinkle in the oxo cubes. Stir the oxo through and then add a heaped teaspoon of marmite and dissolve this in the sauce.

    At this stage add salt and pepper to taste and add a little sugar to take the edge off the tomatoes.

    Now let it heat through in the pan until your pasta is cooked (10-12 minutes).

    When cooked, dish out the pasta and add spoonfuls of sauce to the top and serve with dippy bread, red wine and hungry friends and children.
