Originally a good Hairy Bikers recipe and adjusted to my preferences.
Really delicious served with pea rice or stuffed into a taco with raw sweet pepper and grated cheese!
Also makes a nice supper gently heated in an oven and served with a buttered roll. Enjoy!

Ingredients

  1. 1 tsporganic butter
  2. 1 tbspolive oil
  3. 500 gramslean minced beef
  4. 2medium onions, chopped
  5. 3garlic cloves
  6. 1 tspchilli powder
  7. 2 tspground cumin
  8. 2 tspground coriander
  9. 2 tbspplain flour
  10. 300 mlbeef stock
  11. 400 gramschopped tomatoes
  12. 200 gramsmixed beans
  13. 3 tbsptomato puree
  14. 1 tspcaster sugar
  15. 1 tspdried oregano
  16. 1bay leaf
  17. 1 pinchblack pepper
  18. 1 pinchsea salt
  19. 3/4medium sweet pepper, diced
  20. 1large carrot, diced

Steps

    Mix together the olive oil and butter.

  2. 2

    Break up the mince and stir in the pinch of salt and pepper.

  3. 3

    Add the oily butter to a hot pan. Add the onion, minced beef, sweet pepper and carrot. Fry for about 5mins.

  4. 4

    Add the garlic, chilli powder, cumin and coriander. Stir and fry for a few mins.sprinkle over the flour and stir well.

  5. 5

    Stir in the stock. Tip in the tomatoes, tomato puree, mixed beans, caster sugar, oregano and bay leaf. Stir well.

  6. 6

    Cover loosely with a lid. Reduce the heat and leave to simmer for about 45minutes until the sauce has thickened. Season to taste and serve!
