Ingredients

  • 3 quartbeef stock
  • 2each bay leaf
  • 2 clovegarlic cloves minced
  • 1medium onion minced
  • 1 tbsppaprika
  • 1 lblean ground beef
  • 2each eggs
  • 1/2 cupcooked rice
  • 1 1/2 tspsalt
  • 1/2 tspblack pepper
  • 2 tbspfresh mint chopped
  • 1/2 tspI oregano
  • 2 tbspminced onion
  • 1 tbspminced bell pepper
  • 1/2 tspgarlic powder
  • 2 cupbread crumbs
  • 1/2 cupmilk
  • 3medium carrots diced
  • 3large potatoes diced
  • 1each chiote chopped
  • 2each zucchini chopped
  • 1 cantomato sauce 8 oz
  • 1 canPetit diced tomatoes

Steps

  1. 1

    Take first 5 ingredients, sauté onions in a large pot then add remaining 4 ingredients set aside.

  2. 2

    Put chopped vegetables in a bowl and set aside.

  3. 3

    Mix remaining ingredients together and form in to meatballs.

  4. 4

    Bring stock to a boil carefully add meatballs and simmer for 25 minutes

  5. 5

    Add chopped vegetables and cook for another 30 minutes. Check to see if vegetables are done.
