This is my version of buffalo shrimp, the coating is light so as not to overwhelm the shrimp. The buffalo sauce spicy but not searing hot. Serve with celery and I add cucumbers for a cool addition with the celery. They make a great appetizer or a nice lunch to share!

Ingredients

45 mins
  1. 1 1/2 lbextra large raw shrimp, peeled and deveined
  2. 1/2 cupmayonnaise
  3. 1/2 cupcold water
  4. 1FOR COATING SHRIMP
  5. 1/2 cupall-purpose flour
  6. 1/2 cupgrated parmesan cheese
  7. 1 tspcajun seasoning
  8. 1/2 tspblack pepper
  9. 1/2 tspgranulated garlic or garlic powder
  10. 1FOR BUFFALO SAUCE
  11. 1/2 cuphot sauce, I used Franks brand
  12. 1 tbspunsalted butter
  13. 1 tspseasoned rice wine vinegar
  14. 4 cupor more oil for frying, I used canola oil
  15. 1Creamy Blue Cheese Dressing and Dip, recipe below
  16. 1Spicy Ranch Dressing / Dip, recipe below
  17. 1TO SERVE WITH SHRIMP
  18. 2cucumbers, cut into sticks
  19. 4stalks celery, cut into sticks

Steps

  1. 1

    In a large bowl whisk mayonnaise and cold water until smooth, add shrimp, mix them to coat with mixture and place in refrigerator while preparing the remaining ingredients

    In another large bowl combine ingredients for coating shrimp, whisk to combine

    In a third bowl combine hot sauce ingredients and heat in microwave just to have butter melted and warm sauce

  4. 4

    Heat oil in dutch oven to 365. Leave enough room in pot for oil to expand.

  5. 5

    Remove shrimp from mayonnaise / water mjxture and place on paper towels to remove excess liquid, but do not dry them

  6. 6

    Add shrimp to bowl with seasoned flour, toss to coat them

    Fry shrimp in hot oil, shaking off excess coating before dropping in oil. Do not crowd shrimp, they need room to cook. Each batch will take 3 to 4 minutes.

    Drain as they come out of oil on paper towels

    Toss with warm sauce

    Remove from sauce with a slotted spoon to a serving platter. Serve with celery sticks, cucumber sticks. Have blue cheese and ranch dip for dipping

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
