A mild flavored "faux" risotto that's great to put together when you don't have time to do the real thing.

Melt butter in a 2 quart saucepan over medium-high heat. Add rice, green onions, and celery. Stirring constantly, cook until rice is browned and vegetables are tender (about 5 minutes).

Slowly stir in broth, water, and spinach. Heat to boiling, reduce heat to low, and cover. Cook for 20 minutes or until rice is tender and liquid is absorbed.

Remove from heat and stir in parmesan cheese. Serve hot.
