Mix all the breading ingredients together in a larger bowl.

Scrub the potatoes and slice them in 1/4" pieces.

Place potatoes into a bowl of slightly salted water.

Heat cooking oil in fryer, 375-400 degrees.

Place a handful potato slices into breading, toss tip coat. Place carefully into hot oil.

Deep fry until golden brown, 7-9 minutes.

Remove potatoes to a platter with paper towels on it.

NOTE: This breading can be made into a batter by adding water. Add enough water until it has a plane batter consistency. This can be used for chicken or onion rings.
