Ingredients

  1. 4 eachBoneless/Skinless Chicken Breasts
  2. 1 cupBBQ Sauce
  3. 1 1/2 cupColby Jack Cheese blend
  4. 8 sliceBacon
  5. 2/3 cupDiced Tomatoes
  6. 1/4 cupChopped Chives

Steps

  1. 1

    Preheat oven to 375°F, while heating, Pound Chicken Breasts with tenderizer to flatten. (This helps chicken get tender & juicy and hold toppings)

  2. 2

    Bake Chicken for 20 minutes on a baking pan (use foil and non stick spray before placing chicken onto pan)

  3. 3

    Fry Bacon while chicken cooks. (Do not burn)

  4. 4

    Pull chicken from oven, drain juices, cover with BBQ sauce.

  5. 5

    Lay 2 strips bacon in an X pattern on top of BBQ sauce, sprinkle with diced tomatoes, then sprinkle cheese over tomatoes covering the chicken breast.

  6. 6

    Turn oven to broil and allow to heat up. Place Chicken under broiler until cheese melts. Remove from broiler and sprinkle with chives!
