Ingredients

  • 1 1/2 cupfreshly squeezed lime juice
  • 1/2 cupfreshly squeezed orange juice
  • 1 cupwater
  • 4 1/2 cupsugar
  • 1/4 cuptequila
  • 1 tspgrated lime zest
  • 1 packages(1 3/4 ounces) powdered fruit pectin
  • 1lime peel strips
  • 2drops green food coloring

Steps

  1. 1

    In a large Dutch oven, combine fruit juices, water, and pectin over medium high heat.

  2. 2

    Bring to a rolling boil.

  3. 3

    Add sugar.

  4. 4

    Stirring constantly, bring to a rolling boil again and boil 1 minute.

  5. 5

    Remove from heat; skim off foam.

  6. 6

    Stir in tequila, lime zest, and food coloring.

  7. 7

    Place a lime strip in each heat resistant jar.

  8. 8

    Spoon jelly into jars; cover and cool to room temperature.

  9. 9

    Store in refrigerator.

  10. 10

    *This recipe makes about 6 1/2 cups jelly.*

  11. 11

    **A jar of this makes a nice gift along with some crackers and cream cheese.**

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
