Ingredients

  1. 3-10 oz packages of frozen spinach completely defrosted and drained very well
  2. 1 1/2 cuphalf and half
  3. 3eggs
  4. 1 cupshredded swiss PLUS an additional 1/4 cup for topping
  5. 1/2 cupshredded parmesan(or a good quality grated) PLUS an additional 1/8-1/4 cup for topping.
  6. 1 tspsalt
  7. 1/2 tsppepper
  8. 1/2 tspground nutmeg

Steps

  1. 1

    Preheat oven to 350.

  2. 2

    Beat eggs well and add in the half and half.

  3. 3

    Add the spinach and remaining ingredients and mix well.

  4. 4

    Spoon the spinach and cheese mixture in a WELL greased or sprayed baking dish. Top evenly with 1/4 cup of swiss and Parmesan.

  5. 5

    Bake for 45-55 minutes or until center is set and its a nice golden brown.
