Ingredients

  1. 2avacados sliced 1/4 inche thick
  2. 2/3 cupmayonnaise
  3. 1 tbsplemon juice
  4. 3 cupcubed cooked chicken
  5. 1/2 stalkcelery minced
  6. 1 tspminced onion
  7. 1chopped tomato and sliced jalepeno for garnish
  8. 6cockail or wine glasses for serving
  9. 1 smallseeded minced fresh jalepeno pepper
  10. 1 cupshreaded lettece for bottom of glass
  11. 1salt and pepper to taste
  12. 1chili powder for sprinkling the avacado

Cooking Instructions

    combine mayonnaise and lemon juice with salt and pepper to taste and mix wel

    combine chicken, celery, onion, minced jalepeno

  3. 3

    fold mayonnaise mixture into chicken to combine

  4. 4

    TO ASSEMBLE

    sprinkle avacado slices with chili powder

  6. 6

    put shredded lettece in bottom of coctail glass

  7. 7

    line sides of glass with avacado slices

  8. 8

    put a scoop of chicken salad in the middle making sure the avacado slices show over the rim of the glass

  9. 9

    garnish with chopped tomato and thin slices of jalepeno

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
