I make something similar with ground beef and cheese so I've adapted the recipe to use up some leftover turkey. The whole family LOVED these!! Easy peezy and a great way to use leftovers from Thanksgiving! Instead of stuffing maybe mashed potatoes? Enjoy!! You can also make in a 8x8 pan or 9x13 but my kidlets get a kick out of the "stuffin muffin".

The best way to finish up that leftover turkey. This gumbo is full of flavor and is delicious over rice or without. The day after Thanksgiving and/or Christmas when everyone was tired of eating the turkey, my Mom would take the carcass and smoosh it into a large pot and cover it with water and let it simmer all day in preparation for the gumbo. Then start the roux. The base of any legit gumbo is the roux, which should cook until it is a dark chocolate brown color. #GoldenApron23

Leftover turkey put to use

I get to make this once a year after thanksgiving. My husband normally doesn't like soup , but this is one that he does like and will eat. I have found this to be one of the better uses for my leftover turkey and gravy as my kids don't do turkey sandwiches.
