While at work one day a traveling produce man came in with a large amount of squash. Not being very familiar with cooking squash personally, I was challenged to make a dish using it. The result of said challenge being this recipe. It's become a fast fan favorite in my house. I hope you enjoy it too!

Cheesy Squash Casserole

While at work one day a traveling produce man came in with a large amount of squash. Not being very familiar with cooking squash personally, I was challenged to make a dish using it. Ingredients

  1. 2 lbYellow squash
  2. 1/3 largewhite onion halved & thin sliced
  3. 1 tbspButter
  4. 2 tbspAll purpose flour
  5. 1 cupMilk
  6. 2 cupKraft Shredded Triple Cheddar Cheese
  7. 1/2 tspSalt
  8. 1/4 tspGround black pepper
  9. 1/4 tspCayenne pepper
  10. 1 packagesButtered ritz crackers
  11. 1Cooking spray

Cooking Instructions

    Thinly slice the 2 lbs of squash

    Cook the squash and onions in a small amount lightly salted boiling water for 10 to 12 minutes or until veggies are tender.

    Drain and set aside.

    Preheat oven to 350°F

  5. 5

    Melt butter in a medium saucepan over medium heat. Once butter is melted, add flour. Stir occasionally for 1 minute.

    Warm milk for about 1 minute in microwave. Gradually add warmed milk to butter/flour mixture. Stir constantly, until mixture is thickened and bubbly.

    Remove mixture from heat.

    Add 1 1/2 cups cheese, salt, pepper, and cayenne. Stir until cheese melts completely.

    Add squash. Stir well.

    Spoon squash mixture into a shallow baking dish lightly coated with cooking spray.

    In a small bowl gently crush ritz crackers and combine with additional 1/2 cup of cheese.

    Evenly coat squash with cracker mixture.

    Bake at 350°F for 20 - 25 minutes or until cheese is melted.
