My dad used to make this for us a lot when we were growin' up, my turn to make Thanksgiving dinner so thought I'd break out an old favorite, my dad never used nearly so much butter though and the chopped herbs are my own addition to the recipe
Mashed Carrot N' Turnip
My dad used to make this for us a lot when we were growin' up, my turn to make Thanksgiving dinner so thought I'd break out an old favorite, my dad never used nearly so much butter though and the chopped herbs are my own addition to the recipe
Cooking Instructions

Boil onion, carrot and turnip over medium high heat in a large pot until fork tender (I simmered mine for 3 hours on medium-low in a pot on the stove, you can do this quicker over medium-high heat for an hour give or take)

Drain most of the water from the carrot and turnip, (you can do this over a container to reserve the sauce for other purposes such as soup stock or gravy)

Add garlic, and butter to carrot and turnip mix, mash or hand-blend to desired consistency
- 4
Stir in chopped parsley and cilantro
- 5
Let sit for 5-10 mins. Serve and season with more butter, salt and pepper as desired

I came up with this dish using parsnips, which I saw for the first time in England.There aren't really any hints, since all you do is mash them, but as I mentioned in Step 3, I found that the long fibers of the parsnips didn't get stuck in the masher as easily, if they were cut in cubes, rather than rounds.
