Ingredients

  1. 1roll pillsbury refrigerated sugar cookies
  2. 1 tspgrated lemon peel
  3. 1 1/2 cupwhite vanilla baking chips
  4. 3/4 cupsweetened shredded coconut
  5. 1/2 cupchopped macadamia nuts, if desired
  6. 1 canfat-free sweetened condensed milk (not evaporated)
  7. 1 tbsplemon juice
  8. 1/4 tsplemon extract, if desired

Steps

  1. 1

    Heat oven to 350°F. Line 13x9 pan with foil and spray with cooking spray.

  2. 2

    In a large bowl, break up cookie dough. Add lemon peel; beat with electric mixer on low speed until peel well combined. Press dough into bottom of pan.

  3. 3

    Sprinkle white chips, coconut and macadamia nuts over dough.

  4. 4

    In a small bowl stir together condensed milk, lemon juice and lemon extract. Pour over top.

  5. 5

    Back 28-35 minutes or until edges are golden brown and center is slightly glossy. Cool completely, about 45 minutes.

  6. 6

    Cut into 6 rows by 4 rows.
