  1. 180 gramsDark Chocolate
  2. 100 mlDouble Cream
  3. 6large Eggs
  4. 60 gramsSugar

    Break chocolate into smaller pieces and add to a bowl. Place bowl on top of a pot of boiled water. Place a dish towel over the bowl. The steam underneath the bowl will slowly melt the chocolate as you prepare the rest of the recipe.

    Separate egg yolks and egg whites.

    Heat cream on low heat until warmed. Once chocolate is melted, pour the cream over the chocolate and mix. Transfer to a larger bowl.

    Add the egg yolks to the chocolate and cream and mix well until fully incorporated.

    In a separate bowl whip the egg whites while slowly adding sugar until stiff peaks form (meringue).

    Put half of the meringue into the chocolate mixture and fold together.

    Add the rest of the meringue and gently fold together until most of the egg whites are mixed in. It's ok to have some swirls of white though.

    Add mousse to individual glass dishes or leave in bowl and refrigerate for at least 4 hours or overnight. Once set, pipe on whipped cream or decorate with fruit.
