Ingredients

  1. 1 can(20oz) can pineapple chunks in juice
  2. 1 1/2 lbMedium shrimp peeled
  3. 1 lbbag frozen stir fry vegetables
  4. 2 tbspsoy sauce
  5. 2 tbspcornstarch
  6. 1 canthe reserved pineapple juice
  7. 1/4 tspwhite pepper

  1. 1

    Drain pineapple and put juice in a small bowl

  2. 2

    Heat a large skillet over high heat, add shrimp and cook 5 minutes.

  3. 3

    Remove cooked shrimp to a plate

  4. 4

    Add frozen vegetable mix to pan and cook for about 4 minutes

  5. 5

    Stir soy sauce and cornstarch into reserved pineapple juice and add to pan

  6. 6

    Add shrimp and stir to coat; cook until the sauce thickens and shrimp is cooked through, about 3 minutes.

  7. 7

    Add pineapple chunks and cook until heated

  8. 8

    Serve over rice and enjoy !
