In large skillet, fry bacon. Then add hashbrowns, onion powder, & parsley. Stir & cook for 5 minutes. Can add a little olive oil (up to 2 tbsp) if things start to stick. If you decide to use things like turkey bacon, you will need olive oil & maybe up to 4 tbsp, since other bacons, besides pork, do not produce as much grease.

Stir in eggs, salt, & pepper. Evenly spread in pan. Top with cheese. Cover & cook for 5 more minutes.

Loosen gently with spatula, cut into wedges & serve up.
