needed recipes to use up potatoes I grew, this 1 qualifies as a keeper forsure. I use Russetts, Yukon gold and Pontiacs. the Russetts came in first followed by Pontiacs, yukon gold were a little bit dry but OK.

Ingredients

  1. 1 tbspbutter
  2. 2 tbspolive oil
  3. 3 clovegarlic minced
  4. 2 tbspparsley
  5. 4 mediumPotatoes
  6. 2 tspItalian seasoning , more if you like ,none if you don't like
  7. 1/2 cupranch dressing
  8. 1 tspChipotle hot sauce, use more if you can stand the heat use less if you don't like it hot
  9. 1S&P to taste , I used Himalayan rock salt and freshly cracked black pepper
  10. 1 pinchof Old Bay

Cooking Instructions

    Preheat oven to 400°F

    On medium-low heat,melt butter with next 3 ingredients

  3. 3

    Place wooden spoons on each side of the potatoes so you don't cut right through them.sliced potato across with 1/8in. slices from one end to the other.if U cut each end off spud it will fan out better.

    Place spuds in shallow baking dish and pour butter mixture over potatoes. I got my fingers in there & pinched potato open from the sides and made sure the butter and herb mixture got in between the slices.

    Place in the oven on top rack n bake for at least 60 to 75 minutes depending on how many times you open the door.

    During the cooking process I use the spoon and basted the potatoes with the excess butter mixture in baking dish 3 or 4 times.

    mix ranch& Chipotle hot sauce together spoon over top potatoes, garnish with parsley season with salt, pepper & dusting of Old Bay
