Super Crispy Baked Wings

These are baked? But so crispy!
My wife likes her wings super crispy, but we don't deep fry. So I am always trying new ways to bake them and get them tasty and crispy, without drying them out. Parboiling seems to be an easy way to accomplish this. The removal of the fat during the boil seems to allow them to crisp up better. Plus you can sauce them how you like, or eat them plain. So many options. It also seems better to get your wings as close to the same size as possible. Small ones take less baking time than larger ones. Too great a variation in size can lead to over or undercooked wings.

Steps

60 mins
  1. 1

Set a large pot about 2/3 full of water on high heat to a boil. Salt the water like you would for pasta, if you desire.

  2. 2

Clean/prep your chicken wings. You can leave them whole, tip them or separate them, your choice.

  3. 3

Spray your baking sheet with spray oil, or oil it up however you normally would.

  4. 4

Once the water starts to boil (rolling boil) place as many wings in that will comfortably fit and covered by the water.

  5. 5

Bring water back to boil, boil for 8-10 minutes

  6. 6

Remove and place on baking sheet without overlapping.

  7. 7

Repeat boiling steps if required to finish up all the wings.

  8. 8

If you have the time, place in refrigerator for an hour or two to allow to dry, or if time is lacking, let sit until relatively dry if possible.

  9. 9

Depending on how long you can allow parboiled wings to dry, preheat oven to 450°F

  10. 10

Salt and pepper your wings, place on middle rack in oven

  11. 11

Cook for about 25-30 minutes, remove and flip all of them over. Do not skip this step. The skin side in contact with the baking sheet gets the crispy, so this is important

  12. 12

    Bake for another 5-10 minutes

  13. 13

Remove and sauce them up, or serve as is if you like them plain

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
