Ingredients

  1. 2 lbassorted sausage, I used hot and sweet italian, garlic and cheese and breakfast sausage, use your favorites
  2. 2peppers sliced, I used one bell pepper and one italian sweet pepper
  3. 1large onion, sliced
  4. 6button mushrooms, sliced
  5. 3 cloveminced garlic
  6. 1 (28 ounce)can crushed tomatoes
  7. 1/2 tspblack pepper and salt to taste
  8. 1 tspitalian seasoning
  9. 1/4 tspred pepper flakes
  10. 1 tsphot sauce, such as Frank’s Hot Sauce
  11. 1/4 cupgrated parmesan cheese and more for adding at serving time

    In a large skillet add a film of olive oil add sausage and brown on all sides. Remove to a plate. Add peppers, onions, garlic, and mushrooms to skillet and saute 5 minutes. Add remaining ingredients except cheese and return sausage to skillet. Combine with sauce, cover and cook on low 35 to 45 minutes. Add cheese and stir to combine. Transfer to serving dish and serve with extra cheese on the side.

    Serve with crusty bread or pasta and a green salad. enjoy!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
