Ingredients

6 servings
  1. 1 packageslasagna noodles
  2. 1 1/2 packagespancietta (basically diced bacon-found in coolers by deli)
  3. 1 packagesfrozen spinach, thawed
  4. 18 oz ricotta
  5. 1egg
  6. 1 smalldiced onion
  7. 1 tspminced garlic
  8. 1 tbspolive oil
  9. 1 pincheach season salt and black pepper
  10. 1 1/2jars of your favorite spaghetti sauce (I use Prego)
  11. 1 packagesshredded four cheese blend

  1. 1

    Preheat oven @ 400 °. Saute pancietta, onion & garlic in 1 tbsp olive oil. Set aside when done.

  2. 2

    Boil noodles as directed & let cool.

  3. 3

    Mix ricotta and egg, first, then add all ingredients together, except noodles.

  4. 4

    Then take 1 noodle & spread mixture from end to end. Take one end & roll it up. Place in greased 13x9in pan seam side down. Repeat.

  5. 5

    When finished, pour spaghetti sauce on top, then shredded cheese. Cover with foil & bake for 40 minutes then serve with salad and garlic bread.
