Ingredients

  1. 1 cupQuick cooking oats
  2. 1 1/2 cupboiling water
  3. 1 3/4 cupCoconut flour
  4. 1/2 tspxanthum gum
  5. 1 tspbaking soda
  6. 1/2 tspsalt
  7. 1 tspcinnamon
  8. 1/2 cupbutter, softened
  9. 1 cupgranulated sugar or sugar substitute such as splenda
  10. 1 cupfirmly packed light brown sugar
  11. 2eggs or equivalent of egg substitute
  12. 1 tspvanilla extract

    Preheat oven to 350°F. Grease 9x5 loaf pan.

  2. 2

    Place oats in a small heatproof bowl. Add boiling water, stir, & set aside.

  3. 3

    Combine flour, xanthum gum, baking soda, salt, & cinnamon in a small bowl & mix well.

  4. 4

    Place butter in a large bowl. Beat with an electric mixer set at high speed until creamy. Add both sugars gradually, beating constantly until well blended. Add eggs, one at a time, beating well after each addition. Beat in vanilla.

  5. 5

    Gradually add flour mixture to creamed mixture & beat until smooth. Stir in oats mixture. Spoon batter into prepared pan.

  6. 6

    Bake until toothpick inserted into center comes out clean, about 1 hr.

  7. 7

    Cool in pan for 10 minutes. Transfer bread to wire rack to cool completely. Then slice & serve .
