Take a six pack muffin pan. Spray with nonstick. Preheat oven 425° Fahrenheit.

Take the green tomato wash and slice it. In a pan heat the oil. Chop your onion. Add tomato to the hot oil and fry add salt and pepper.

When soften add onions and stir well. Now let the onions get tender. Let it cool.

Take the parmesan cheese and form around the sides and bottom with the cheese.

Take a little bit of mozzarella cheese on bottom of each muffin bottom. On top of the parmesan cheese.

Take and fill the muffin holes with the tomato and onion mixture.

Beat you eggs with water,. Finish filling up the holes with egg mixture top with hand shredded mozzarella cheese.

Bake 15-20 minutes till done. Take out the muffin pans garnish wit cilantro serve hope you enjoy.
