I sometimes will rub butter on the patted dried turkey and under the skin then sprinkle on the salt, pepper, and seasoning and let it sit over night in the fridge

I really wish I had more time to add things to the meat, but I was in a rush and these were soooo good just the way I made them!

Ok Im just showing off. Found a good brine recipe on line. Eazy and tweeked to make my own. Brined with cooking salt worecestershire sause fresh rosmary brown sugar onions garlic pepper as the main ingredients.

Summer is now over and we realized it passed us by without using the smoker once. So we raided the freezer and found 2 whole chickens and a package of turkey legs... perfect to go along with college football and beers on a Saturday!
