Mexican fajitas

Steps

Take boneless, skinless chicken breasts cut into strips about the size of a small finger One red or yellow onion, cut top to bottom in strips (red is better) Two bell peppers - one red or yellow, one green, cut into long strips Handful of fresh cilantro (coriander), stems and leaves, chopped finely.

Heat frying pan or cast iron skillet to high temp and add a large blob of oil to the bottom. Add garlic and onions, keep moving to avoid sticking.

After 1-2 minutes continue stirring, while adding spices. Heavy on salt, chipotle powder, and peppers; small amounts of cumin and oregano. P

Stir until chicken begins to look done on outside; add beer, lime juice, and dash of white vinegar. Continue cooking for 2-4 minutes, until liquid has largely cooked off. Serve with flour tortillas.
