Had this idea to get my children to open up there taste buds to different foods and cultures. So first stop the Caribbean. I live in a predominantly west indian area so oxtail,rice and peas etc we eat all the time. Had this at a west Indian restaurant before so whalla.enjoy

Ingredients

  1. 1 cancoconut milk
  2. 3 cuptomato sauce
  3. 1 packagesthin boneless breast
  4. 2 piecescallions
  5. 1 mediumorange pepper
  6. 1 mediumyellow orange
  7. 3 tbspjerk sauce
  8. 3 tbspcock seasoning
  9. 1 tsponion powder
  10. 1 tspgarlic powder
  11. 3 tbspolive oil, extra virgin
  12. 1 boxPenne pasta
  13. 1 packageschicken breasts
  14. 3 tbspcock seasoning
  15. 1/2 cupparmesan cheese

    Season chicken breast with onion,garlic powder,cock seasoning, and jerk sauce. Let marinate overnite or atleast 2hrs.

    Set your chicken out to reach room temp. Boil your pasta in salted water. Chop peppers and scalions. Heat skillet add olive oil. Shake off excess jerk sauce

  3. 3

    Brown chicken breast on both sides. Cook thourally but donot over cook especially if they are thin. Remove from pan. Once cooled some cut up in long strips or small chunks.

    Add EVOO to the pan, add peppers and scallions to the pan, season with cock seasoning as well as salt to taste.

    Add can of coconut milk and tomato sauce, make sure not to over cook our pasta. Make sure paste is drained and ready to go. Add cut chicken to the pan, stir to make sure sauce and chicken mix. 1 min. Add pasta and mix to coat all the pasta, sauce and chicken. Add parmesan cheese.

    Eat up a lil spicy kick but not mouth on fire hot.
