People are always looking for new ways to use local fruits -- at the airport in our sister island of Tobago there are a group of people who have taken the green papaya and transformed it into a most sought after dessert...Each person have their own special recipe ..
Cooking Instructions

Cut open papaya -scoop out seeds and peel ...grate---it will look like fine shreds ( I used a handheld grater)
- 2
Squeeze out some of the juice from the shredded papaya .

In a pot over medium heat add the shredded papaya, the sugar , the lemon zest and lemon juice
- 4
Cook until the mixture gels ( all liquids should be dried up)as shown in step pic---put into a dish and let cool completely
- 5
Shape into balls and roll into the cinnamon sugar coating.
- 6
It can be enjoyed right away or can be placed in the fridge for 30 minutes !!!
