Juicy, Fried Chicken

I watched a recipe from a cooking channel called New Scandinavian Cooking, and the technique grabbed my interest. So you pan-fry pieces of chicken in medium heat while adding a circular, thick stone on top of them. That way, the chicken would cook faster. I used that method (I used a thick circular marble about 20 cm in diameter) and it took about 10 minutes. The result is tasty and yummy! I modified the original recipe according to our preference.

Mix chicken with salt, garlic, lime, and black pepper. Put them in the fridge for at least an hour (all night would be best). But if you're in a hurry, you can wait about 5 minutes before cooking.

Heat the oil in a pan (I used medium heat). Add the chicken, the skin part should touch the pan. Immediately, put the stone on top of the chicken pieces.

After five minutes, carefully remove the stone (it will be very hot!) and flip the chicken. Put the stone back again on top of the chicken.

After five minutes, remove the stone carefully before removing the chicken pieces from the pan.
