Put oil in large nonstick skillet over medium-high heat. Add ham, mushrooms, peas and onions; cook 5 minutes, stirring constantly

Add rice, egg and soy sauce; mix well

Cook for 2-4 minutes or until the egg will curdle, stirring constantly. Add peanuts and stir; serve immediately

Substitute: Make a meatless version, replacing the ham finely chopped assorted vegetables and / or tofu into cubes

Enhances the flavor: if you want a more flavorful rice, prepare it as directed, but replaces the water with chicken broth
