This is my Grandma's recipe for making pfeffernüsse. It has been a favorite of mine since I was a small child. As you may notice the ingredient amounts are a bit strange, that is because this recipe is only the half of the original recipe which is double this size! I don't believe my grandma ever even made the full recipe, although her mother may have. Regardless, enjoy these tasty treats with your morning coffee or a handful throughout the day!

Ingredients

3 hours
  1. 1/2 cupand 3 tablespoons molasses
  2. 1/2 cupand 3 tablespoons corn syrup
  3. 1 1/2 cupsugar
  4. 3/4 cupbutter/margarine
  5. 1 tspground cloves
  6. 1 tspcinnamon
  7. 3/4 tspbaking soda
  8. 1 tspcream of tartar
  9. 6 cupall-purpose flour

    Mix molasses, corn syrup, sugar, and butter together in a medium to large pot over low-ish heat until soft.

    Sift together cloves, cinnamon, baking soda, and cream of tartar into the mixture. Note: if you wish you may substitute the baking soda and cream of tartar for baking powder.

  3. 3

    Turn heat down or off. But keep it warm as that will make this next step easier.

  4. 4

    Stir in the flour one cup at a time until mixed. This may take a while and your arm may get tired, but push through or bring a friend to help. Be sure to use a strong wooden spoon.

  5. 5

    Roll out the mixture into long 1/2 inch diameter rolls and place on cookie sheets to cool in a cool room or refrigerator. At least a couple hours or overnight until they are firm.

    Cut the rolls into little circles. About 3/8ths inch thick or so.

    Place on cookie sheets and bake at 350°F for 6 minutes. The longer you bake them, the harder they will be. They will be soft right out of the oven while warm, but will get harder as time goes on.

    Keep in airtight container and they will last a good long while. These do not freeze well.
