Ingredients

  1. 8tilapia filets
  2. 1 tbspcajun seasoning
  3. 1 tsponion powder
  4. 1 tspgarlic powder
  5. 1/2 tspcayenne pepper
  6. 1/2 tspthyme; minced
  7. 1/2 tspground white pepper
  8. 1grapefruit; zested
  9. 1orange; zested
  10. 2lemons; zested
  11. 1sea salt
  12. 1EVOO; as needed

  1. 1

    Drizzle just enough oil over fish to cover. Season. Keep zest for garnish.

  2. 2

    Slice the fruits into medium-thin slices. Lay half across the bottom of a baking sheet. Place filets on top. Cover with slices of fruits. Keep a few slices for plating.

  3. 3

    Bake at 400° for approximately 8 minutes or until thermometer reaches 145°

  4. 4

    Garnish with slice of fruit and/or parsley

  5. 5

    Try marinating in orange juice or white wine!

  6. 6

    Variations; Capers, lemon or orange peel seasoning, coriander seed, cilantro, mustard, sriracha, lime, basil, oregano, herbes de provence, celery salt, poppy seeds, coconut milk, tarragon, mango, dill, pineapple, allspice, saffron, paprika
