Ingredients

1 hour
10 servings
  1. 1large head cauliflower
  2. 5shallots
  3. 1stalk celery
  4. 1small carrot
  5. 1half a poblano pepper
  6. 1bay leaf
  7. 1box of chicken stock
  8. 1/2 cupheavy cream
  9. 1bacon to taste
  10. 1bunch of scallions
  11. 1salt, pepper & Cajun seasoning to taste
  12. 2Tbsp olive oil
  13. 1for garnish I like grated cheddar, sour cream, bacon crumbles and green onion.

Steps

    Add the olive oil to a large pot on medium/high heat.

  2. 2

    Rough chop all the veggies except the bay leaf, and saute with Cajun seasoning to taste, until softened.

    Add a little bacon for flavor:)

  4. 4

    Add your stock and bay leaf and bring too a boil.

  5. 5

    Boil for 10 minutes.

  6. 6

    Remove bay leaf and carefully puree soup in batches. Be sure to cover blender lid with a towel to prevent explosions;)

  7. 7

    Once pureed, add back to cooking pot and simmer.

  8. 8

    Add cream and stir well.

  9. 9

    Gently simmer for 20 minutes. Add some more bacon and chopped green onion.

  10. 10

    If too thick, you can thin out with more stock, or cream. Serve and enjoy:)
