Bean sprouts would be a great addition! I couldn't give measurements for the spices because I like my food very spicy. Also, apparently the keys to a good fried rice are: using cold rice and cooking with butter

Heat a teaspoon of butter in a wok over medium high heat. Scramble the eggs and set aside

Heat some butter in the wok over high heat. Add your finely chopped carrots, half of the green onions (so their flavor won't be overpowering like raw onions, but also to have a crunchy texture) and peas. Saute until nicely browned then turn heat down to medium

Add about half a tablespoon butter to the wok (without discarding the veggies), add cooked rice and the rest of your green onions. Fry for a minute or so

Turn off heat and add scrambled eggs (residual heat should warm them through) as well as sambal oelek, soy sauce and sesame oil
