Ingredients

  1. 4 ozCream Cheese, softened
  2. 4 tbspRicotta Cheese
  3. 20 largePitted Green Olives
  4. 4 sliceProscuitto
  5. 1 tbspMinced Garlic
  6. 2 cupOil for frying
  7. 1 cupPanko Bread Crumbs
  8. 1Egg, beaten

  1. 1

    Preheat oil in shallow pan for frying, to 350°.

  2. 2

    Finely chop Proscuitto in food processor and then place in a small mixing bowl.

  3. 3

    Combine cream cheese, ricotta and garlic in food processor and pulse until smooth.

  4. 4

    Combine cheese mixture with proscuitto.

  5. 5

    Rinse olives of any brine and pat dry.

  6. 6

    Place cheese/proscuitto stuffing in a piping bag and stuff the olives.

  7. 7

    Roll stuffed olives in a beaten egg and then dredge in panko.

  8. 8

    Drop olives into oil for 2-3 minutes or until golden. Drain on paper towels.

  9. 9

    Serve topped with freshly grated parmesan cheese.
