these croutons are great in tomato soup, italian wedding soup, french onion soup and more! cut them smaller and they are great for salads!
Steps

preheat oven to 350°F
- 2
using a pastry brush .. brush a thin layer of olive oil on cookie sheet, or foil/parchment lined cookie sheet.

spread out bread cubes in a single layer.
- 4
brush top of cubes with more olive oil in a thin layer.

using a shaker or as I do( use my sifter) and sprinkle cheese all over the bread cubes.

toss bread cubes in pan to get the rest of parm onto cubes.. replace in single layer..

bake 15-20 minutes tossing every 5 minutes. until cubes are crispy andd browned nicely or till desired doneness..

let cool and serve on soup. or store in air tight container.
