my favourite way to use up leftover mash (even make extra on purpose) great addition to a fry up :excited add whatever u want to the mix like bacon or just leave out the leeks

dice the onion, crush the garlic and shred the leek. sauté the onion and leek for a few minutes without browning. add the garlic and remove from heat

in a mixing bowl combine all the ingredients together
- 3
heat the oil on a high heat. divide the mash mix into 4 balls. place in pan and fry until brown then flip over carefully and repeat. takes about 5 minutes each side

I served with beans, scrambled eggs and toast with a big dollop of brown sauce. as I was extra hungry I had 3 while my daughter had just the one :)
