2 in 1 Roasted Garlic

I had a bag of garlic I needed to use up soon and this is the way we roast garlic in class and at work. It's my favorite way to do it because you're getting the best of both worlds. Not only are you roasting the garlic you're also infusing the oil as well. You can save the oil and use it later.

I used garlic bulbs so I had to peel them. You can also buy them unpeeled. Don't smash the cloves, you need the cloves to be whole. Just gently squeeze the clove and the skin should pop up just enough for you to peel them. If you are using cloves that are already peeled place in a large pot.

Place cloves in a large pot and cover with oil. You want to at least fill about 1-2 in above cloves.

Place on med heat and bring to a boil. I have a gas stove so I turned down to low heat and let them boil for about 20-30 mins. Maybe longer. They need to boil until they are a nice golden color.

Stir the cloves so they won't stick to the bottom and they cook evenly

Once they are done remove from heat and let the cloves cool in the pot. Once cooled store in an container and place in fridge.
