Mukimo is a mixture of maize, Irish potatoes and pumpkin leaves. It is usually cooked by the communities from the central region and those living around them. Generally served with beef stew.

Mukimo is a mixture of maize, Irish potatoes and pumpkin leaves. It is usually cooked by the communities from the central region and those living around them. Generally served with beef stew.

Boil the maize in a sufuria while peeling the potatoes.

Boil the potatoes in another sufuria while preparing the pumpkin leaves.

When the potatoes are half cooked, put the pumpkin leaves on top of the potatoes and cover until well cooked.

Once the maize is ready,mix with potatoes and pumpkin leaves, then mix everything while mashing together.

When the it is well mashed, put chopped onions in another sufuria with cooking oil until browned, then add the mukimo and mix well.
