  1. 1large can cooked black beans
  2. 1 cancrushed pineapple
  3. 1 canSan Marcos chipotle salsa
  4. 2avocados; diced
  5. 1bundle cilantro; chiffonade
  6. 1bundle scallions; chopped
  7. 1 tsponion powder
  8. 1/2 tspgarlic powder
  9. 1/2 tspcayenne pepper
  10. 1vegetable oil; as needed
  11. 1pinch salt and ground white pepper

  1. 1

    Heat vegetable oil in a large saute pan. Drain beans and rinse. Add to pan. Toss. Season. Add pineapple and chipotle. Saute on medium heat for 3 minutes.

    Add avocados, cilantro, and scallions. Toss. Heat for 30 seconds. Serve
