Trying something new this Fall. And as always try to be healthy! I decided to add mushrooms to this. The pepper jack w/ jalapeño peppers cheese doesn't make it spicy but it's a nice touch. Let me know how you like it..

Ingredients

  1. 1/4 cupbutter or margarine
  2. 1 largeonion, chopped, 1 cup
  3. 1/4 cupall-purpose flour
  4. 1 canevaporated milk
  5. 32 ozchicken broth (4 cups)
  6. 1 packagesfrozen baby broccoli florets, thawed
  7. 1/2 tspfreshly ground pepper
  8. 1/4 tspsalt
  9. 8 ozpepper jack cheese w/ jalapeño peppers, cut into cubes
  10. 1 1/2 cupshredded extra sharp cheddar cheese
  11. 1 cupshredded parmesan cheese (4oz)

Cooking Instructions

    Spray 4-qt slow cooker with cooking spray.

    In 1/2-inch skillet, melt butter over medium-high heat. Cook onion in butter 4 min.,stirring occasionally until tender. Stir in flour. Cook 1 min,stirring constantly. Gradually stir in evaporated milk until smooth.

    Pour mixture into slow slow cooker. Stir in broth, broccoli, pepper & salt.

    Cover and cook on Low for 4 hours (I did mine on high for 2)

    Added cheese cubes and stir until melted. Add cheddar and parmesan cheese. Stir until melted. Sprinkle additional servings with more cheddar if desired.
