Trying something new this Fall. And as always try to be healthy! I decided to add mushrooms to this. The pepper jack w/ jalapeño peppers cheese doesn't make it spicy but it's a nice touch. Let me know how you like it..

Cooking Instructions

Spray 4-qt slow cooker with cooking spray.

In 1/2-inch skillet, melt butter over medium-high heat. Cook onion in butter 4 min.,stirring occasionally until tender. Stir in flour. Cook 1 min,stirring constantly. Gradually stir in evaporated milk until smooth.

Pour mixture into slow slow cooker. Stir in broth, broccoli, pepper & salt.

Cover and cook on Low for 4 hours (I did mine on high for 2)

Added cheese cubes and stir until melted. Add cheddar and parmesan cheese. Stir until melted. Sprinkle additional servings with more cheddar if desired.

#GlobalApron 2024, week 39. Ingredient used; broccoli. I needed to use my milk and broccoli rather than it going to waste. I used all my cheddar cheese so I used velveeta cheese ( personally I like velveeta,(no judging). Soup is a dish you adjust to your liking. You may use less cheese and milk, add slowly until it is the consistency you want. cindybear -

My daughter made this soup for us one day and it was a big hit. She found this recipe on-line somewhere. It is a thick soup, but you can add more chicken broth and milk if you prefer a thinner consistency. I omit the salt as there is enough in the chicken broth and the cheese. If you don't have swiss cheese, it is also good with just the cheddar cheese!ingridbagnariol

Our families FAVORITE broccoli soup! Kids love it and its great for a cold day or when your craving some comfort food.I made this in an attempt to recreat Panera Breads version. Wanted to use up leftover cauliflower and broccoli, so created this dish. After eating it I realized it tastes a lot like broccoli cheese casserole, so it could be put in a casserole dish and baked until the cheese melts and served as a casserole or side dish, also.
