Sweet potatoe pie

This is recipe was passed to me by my father-in-law. After making an entire Thanksgiving dinner, my hard work was trumped by his pie. And who could be mad, this pie is so delicious! Best served with a dollop of freshly whipped cream or a scoop of vanilla ice cream.

Steps

Cook potatoes in boiling water until fork tender

Remove and cool slightly. Place in large mixer and add butter, mix until smooth.

Stir in remaining ingredients on low speed for 2 minutes.

Pour into pie pans and place on cookie sheet. Bake at 420 for 20 minutes.

Lower heat to 325 and bake for 55 minutes or until knife inserted into center comes out clean.
