Ingredients

  1. 1 cupveggies (like carrot, Potato, French beans, red pumpkin finely chopped)
  2. 1-1/2 cupPalak leaves finely chopped
  3. 1small Onion chopped finely
  4. 1-2green Chilli chopped finely
  5. 4 podsgarlic chopped finely
  6. 1medium size Tomato chopped finely
  7. 1/3 tspmustard seeds
  8. to taste Salt
  9. as neededMustard oil for cooking
  10. 1 pinchturmeric powder

Steps

  1. 1

    Boil the veggies with 1/3 cup water, turmeric powder and a pinch of salt for 3 minutes in the microwave. Keep aside.

  2. 2

    Take a wok, heat the mustard oil, add mustard seeds and let them crackle.

  3. 3

    Slow down the flame, put chopped garlic and fry for 1 minute. Now add Onion and Chilli and a pinch of salt (already salt is mixed with veggies). Sauté till golden brown.

  4. 4

    Now add Palak leaves and chopped tomatoes and fry for 2 minutes. Mix the boiled Veggies properly and cook uncovered till the curry is cooked.
