Ingredients

  1. 18Jumbo pasta shells
  2. 1 lbPork sausage, with casing removed.
  3. 1 tbspMinced garlic
  4. 1 canChopped tomatoes
  5. 1 cupFinely chopped spinach
  6. 1/2 cupRicotta cheese
  7. 1/2 cupGrated mozzarella cheese
  8. 1Salt and pepper to taste

    Pre heat oven to 175°C (Fan Oven), and fill a large bowl with cold water and ice.

    Bring a large pot of salted water to a boil. Add pasta shells and cook according to package directions. Drain well then add to ice water until ready to stuff.

    Remove the casing from the sausage links. Just use a sharp knife to pierce the casing and peel it off the meat.

    Heat a large frying pan over medium-high heat. Add pork sausage then use a wooden spoon to break up the sausage, cook for 5-6 minutes until browned.

    Add garlic and cook for 30 seconds then add tomatoes and spinach, cook for 1 minute. Remove pan from heat and stir in ricotta cheese.

    Using a spoon, fill pasta shells with pork filling and arrange in a baking dish. Sprinkle tops with mozzarella cheese then bake in the oven for 25-30 minutes or until cheese has melted and tips of shells begin to crisp and brown.
