Mix all the ingredients together. Add enough lemon juice to make the sour cream softer but not very runny.

Do a taste test to see if you want to add anything more to you liking.

Stop taste testing (I know it's hard to resist) and serve with boiled / baked potatoes or use as a potato salad dressing.
