My mum used to make rice pudding from scratch. So easy and handy to have in the fridge as a snack or pudding. And you can make it look fantastic for a special dessert. We have it as supper. Delicious served warm with a bit of strawberry jam or on its own.

Slow Cooker Rice Pudding with Berries

My mum used to make rice pudding from scratch. So easy and handy to have in the fridge as a snack or pudding. And you can make it look fantastic for a special dessert. We have it as supper. Delicious served warm with a bit of strawberry jam or on its own.

Ingredients

8 servings
  1. 175 gramsbrown long grain rice
  2. 1cinnamon stick
  3. 1rind of a lemon
  4. 1 literfull fat long life milk
  5. 1/2 tspsalt
  6. 100 gramssugar
  7. 1 1/2 tbspcorn flour
  8. 500 gramsberries, thawed if frozen or fresh if available

Cooking Instructions

    Cook the rice. Bring 750 ml of the milk to the boil with the salt and sugar.

    Transfer rice and milk to slow cooker.

  3. 3

    Dissolve the corn flour in a bit of milk and add to the Slow cooker - crockpot with rest of milk lemon rind and cinnamon stick.

    Cover and cook on low for 3 to 4 hours until creamy.

  5. 5

    Tranfer to ramekins and store covered in the fridge

  6. 6

    Eat warm or cold. Serve sprinkled with ground cinnamon or berries
