Ingredients

30 mins
  1. 1/4 cupolive oil, extra virgin
  2. 3garlic cloves, peeled
  3. 1 tbsptomato paste
  4. 35 ozcan whole peeled Italian tomatoes with their juices, crushed by hand
  5. 2basil sprigs
  6. 1 pinchsugar
  7. 1salt and fresh cracked pepper, to taste

  1. 1

    In large saucepan heat oil. Add garlic and over moderate heat cook about 5 minutes until lightly golden.

  2. 2

    Add tomato paste and stir for about a minute, then add canned tomatoes and juices.

  3. 3

    Stir in sugar and basil, season with salt and pepper then bring to a low boil. Allow to simmer over low heat while stirring occasionally until it reduces and thickens, about 30 minutes.

  4. 4

    Discard basil and garlic prior to serving.
