Texas Stuffed Bell Peppers
A combination recipe taken from my mother and my mother in law the best of two great recipes.
Cooking Instructions

Boil 3/4 large bell peppers that have had their tops sliced off and seeds taken out
- 2
Brown 1lb of hamburger meat
- 3
Prepare 1 box of zatarns New Orleans style white and wild rice according to directions

Add 1 can of original Rotel tomatoes (drained)
- 5
Remove bell peppers from boiling water, drain, and place in a baking dish to cool partially

Add aprox. 2 cups of shredded cheese to browned hamburger/Rotel mix (please remember to drain hamburger before adding to cheese

Stuff peppers about 3/4 of the way full of hamburger/Rotel/cheese mixture
- 8
Heap wild rice you previously made on top and sprinkle with another pinch of shredded cheese

Bake at 350 for 15 minutes or until cheese is nicely melted
