Ingredients

6 servings
  1. 1double pie crust
  2. 2/3 cupsugar
  3. 1 tspcinnamon
  4. 1/4 tspnutmeg (optional)
  5. 1 tbspbutter, cut into small pieces
  6. 1 1/2 tbsptapioca (recipe calls for instant, but pearls would work also)
  7. 1 1/2 cupraspberries or blackberries (I use half raspberries and half blackberries)
  8. 4 cuppeaches (fresh or thawed from frozen), peeled and sliced
  9. 1egg white beaten with 2 teaspoons water
  10. 2 tbspsugar or vanilla sugar

Steps

    Preheat oven to 400°F.

  2. 2

    In a bowl, combine the peaches, sugar, cinnamon, nutmeg and tapioca.

    Stir well.

  4. 4

    Add the berries and stir gently to combine.

  5. 5

    Roll and place the bottom crust in a 9 inch pie plate.

  6. 6

    Pour the filling into the pie plate.

  7. 7

    Dot with the butter.

  8. 8

    Cover with the top crust, crimping the edges to seal.

  9. 9

    Cut slits or poke holes in the top crust to vent.

  10. 10

    Brush with egg wash and sprinkle with sugar or vanilla sugar.

  11. 11

    Bake for 10 minutes.

  12. 12

    Reduce the heat to 350°F and bake for another 45 to 50 minutes until browned and bubbly.

    Let cool at least 1 hour for best slicing.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
