Blanch the tomatoes. Place the cherry tomatoes into boiling water for 1 minute, then immediately transfer them into ice water. Once cooled, gently peel off the skins.

Prepare the dressing. In a mixing bowl, combine finely chopped red onion with the dressing ingredients and stir until well blended.

Marinate and store. Place the peeled tomatoes into a sterilized glass jar, pour in the dressing, and gently shake to coat evenly. Seal and refrigerate to let the flavors deepen.

Tips.
It's more delicious if you ripen it in the refrigerator for a day and eat it cold.
It goes well with cheese, bread, and a salad with Lucola.
