Ingredients

  • 8Canadian bacon
  • 8eggs or egg whites
  • 1salt & pepper
  • 1Sprinkle of cheese
  • 1chopped scallion

Steps

  1. 1

    Pre heat oven 375

  2. 2

    Spray muffin pan with olive oil, place Canadian bacon in muffin pan

  3. 3

    Add 1 ea egg to each bacon piece

  4. 4

    Add salt and pepper to taste

  5. 5

    Bake for 12-15 min - depending on how well u like eggs cooked

  6. 6

    Top With Cheese & scallion
